This excerpt from a co-authored book manuscript examines how anthropogenic climate change and habitat encroachment has led to a rise in the tick-borne transmissible red meat allergy called alpha-gal syndrome (AGS). To mitigate this condition, biomedical research focused on genetically altering pigs so their organs can be harvested for xenotransplantation has been turned toward producing hypoallergenic pork. Through such processes, human and swine bodies are becoming materially and culturally hybridized, open to multiple forms of consumer capitalism.
